Gluten Free Bread from the Breadmaker on Sandwich Mode
GLUTEN-FREE WHITE BREAD in a BREAD MAKER : SANDWICH MODE
"A basic white bread recipe without the gluten. Easily made in your bread machine! Xanthan gum and the exotic flours are usually easily found in your local health food store."
Ingredients:
3 eggs
1 tablespoon cider vinegar (I used apple cider vinegar)
1/4 cup olive oil (I used extra virgin olive oil)
1/4 cup honey (I doubled this to 1/2 cup)
1 1/2 cups buttermilk, at room temperature (I used regular milk...at room temperature)
1 teaspoon salt
1 tablespoon xanthan gum
1/3 cup cornstarch
1/2 cup potato starch *(I substituted a single flour for this)
1/2 cup soy flour *(I substituted a single flour for this)
2 cups white rice flour *(I substituted a single flour for this)
1 tablespoon active dry yeast (I put the yeast in the honey first and let it go to work for a little while)
Directions:
1. Place ingredients in the pan of the bread machine in the order recommended by the manufacturer. (I put the dry stuff together in the bread machine pan (yeast in the honey), and the wet ingredients mixed together first, then pour the wet stuff into the dry stuff)
2. Select the sweet dough cycle (Of course, I used the "SANDWICH MODE). Five minutes into the cycle, check the consistency of the dough. Add additional rice flour or liquid if necessary.
3. When bread is finished, let cool for 10 to 15 minutes before removing from pan.
