Soft gluten free sandwich bread Recipe ( gluten free) Vegan
1 1/2 cup Brown rice flour
1 1/2 cup teff flour
1 tablespoon active dry yeast
1 tablespoon Xanthan gum
2 teaspoon baking powder
1 tablespoon salt (I used Himalayan salt)
Wet ingredients
2 flax eggs (2 tablespoon flax meal 6 tablespoons water)
2 cup vegan butter milk ( 2 teaspoon apple cider vinegar, 2 cup’s unsweetened almond milk. mix together, let sit for 10 minutes)(warm milk 100-120 degrees)
2 teaspoon oil
1 tablespoon maple syrup
Optional: gluten free rolled oats.
Direction: pre heat oven 400 Degree
1. In a large bowl, whisk together dry ingredients. Combine dry ingredients with wet ingredients.
2. Once all ingredients are combined, pour into a 9 x 5 baking dish cover and let sit for 40 minutes. While the dough is rising oven should be preheated at 400°
3. After 40 minutes, uncover dough, place another 9x5 packing pan directly on top of dough pan.
5. Place in oven at 400° for 40 minutes.
6. After 40 minutes remove top cover and bake for 5 minutes at same temperature.
7. After 5 minutes remove from oven and let completely cool before cutting.
