The Baking Chin Ep. 26: "Great Gluten Free Bread Without the Gums!"
I've been getting requests for Gluten Free Bread and I think I have a recipe that is very easy to make and uses easy-to-find ingredients. It uses none of those pesky gums that other gluten free breads use! It utilizes mostly cornstarch and flaxseed meal. Fresh, it is moist, soft, and bready, as bread should be. Great for picnics, sandwiches, etc. Also Great for gluten free bread beginners! Enjoy!
Gluten Free Flax Bread
450g/1lb cornstarch
100g/ 2/3 cup flaxseed meal
10g/ 2 teaspoons instant yeast
7g/ 1 good tsp salt
50g/ 3 tbsp oil
100g/ 1/2 cup yogurt
375gml/ 1 1/2 cups water
50ml/ 3 tbsp warm water
30g/ 2 tbsp honey
Bake at 450F/230C for about 25 min.
NOTE: After the first day, it will get harder, even when wrapped. To remedy this, either toast it or put it in the microwave with a little water for 30 seconds. :D
