Black Bean Gluten Free and Vegan Burritos made with Kaliwonder Slim Wraps
Ingredients:
Cilantro Lime Brown Rice –
1 cup brown rice
1 3/4 cup vegetable stock or water
2 cloves garlic minced
1/2 cup cilantro chopped
Zest from 1 lime
2 tablespoons lime juice
Salt and pepper
Black Beans:
15 oz can black beans drained
2 teaspoons taco seasoning recipe at ChewOnThis on.blog
1/4 cup water
Assembly:
Kaliwonder Slim Wraps
1/2 cup Pico De Gallo recipe at ChewOnThis on.blog
1 avocado diced
Hot sauce
Instructions:
Cilantro Lime Brown Rice:
Rinse rice under cold water until clear
Add vegetable stock and garlic to rice and bring to a boil
Reduce heat, cover and simmer 40 minutes
Remove from heat, let stand 5 minutes then fluff with fork
Add cilantro, lime zest, lime juice and stir gently
Add salt and pepper to taste
Black Beans:
Add the beans, taco seasoning and 1/4 cup water to skillet
Warm over medium medium heat
Assembly:
Warm the wraps on a hot pan
Fill each wrap with rice, beans, Pico de Gallo, avocado and hot sauce
Fold into a burrito
Enjoy!
