Welcome to Bonita's Kitchen! Today we will be making GLUTEN FREE Hard Bread, also known as Hard Tack, see recipe below!

Ingredients:

1 Cup Gluten free flour
1/2 tsp xanthan Gum
1/3 cup water to form mixture
1 tsp sea salt

Method:

In a large bowl add all ingredients and mix around with a fork.
Then when all the flour is mixed together, start to knead it together.
Using one hand and fold dough inward until all combined.
DON’T add to much water because this is a low hydration bread. 
Dust counter with gluten free flour and roll dough out to 1/2 inch thick. 7 inches length, 4 inch wide.
Place on a cookie sheet NO grease.
Pre-heat oven to 425º and bake for 50 minutes or until dry and golden brown.

After baked remove from heat unto a grate to cold, store in freezer in a freezer bag or container to use as needed.

the flour is made from gluten free grain, and bean flours this blend is a favourite of homes and professional bakers, garbanzo bean flour, potato starch, tapioca flour, whole grain, sorghum flour, fave bean flour

When ready to use, one piece for two people, put in a bowl with cold water to soak. After hard bread is soft put in a saucepan to warm on low heat for 5 minutes. 
Serve with cooked salted cod fish or on its own. Usually used when making fish and Brewis, SEE FISH AND BREWIS RECIPE FOR DETAILS, BELOW.

Fish & Brewis

Recipe:

1 lb. salt cod ( deboned )
2 medium onions ( chopped )
4 medium potatoes
1 piece of salt pork or fatty bacon
2 pieces hard bread
2 tbsp butter
Pepper and sea salt to taste


Method:

Soak over night in separate bowls your salt cod and hard bread. In a medium saucepan start the boil on your potatoes, in a frying pan start frying your pieces of fat pork or you fatty bacon. When your fat pork starts to fry add your chopped onions and butter, continue frying until golden brown.
In another saucepan start your salt cod boiling for ten minutes, when your potatoes have boiled remove them from the pot and scoop into a bowl, in that same water add your hard bread, but drain the water from your hard bread first before adding it to your potato water. After hard bread is boiling for five minutes drain all water off it.
How this is when you start to add everything together, potatoes, fish, hard bread and onions and fat pork or bacon, add salt and pepper to taste, fold everything together then serve.
