Make Super Easy Pineapple Spoon Bread (Gluten Free Alternative) with Ellen
Ellen, our library Director, shows you how to make this super easy side-dish (or snack)
Preheat oven to 350 degrees. Butter a 7x11 (or 9x13 if you are doubling the recipe) glass baking dish.
1/4 cup salted butter - softened
1/2 cup sugar
1/4 tsp salt
4 eggs
7 to 9 pieces of white bread (if you are using GF white bread you will likely use the whole loaf, as GF white bread is typically smaller than regular white bread slices.)
20 ounces of crushed pineapple (drained well)
Preheat oven. Butter baking dish. Cut off crusts of bread and then cut into cubes.
Cream butter and sugar in a mixing bowl. Add salt. Add eggs. Mix well. Add pineapple, stir. Add bread - mix together. Pour into baking dish. Bake for 40 to 45 minutes uncovered. If you are doubling the recipe, you may want to adjust the baking time to 45 to 50 minutes.
