Modified Focaccia Recipe:

Ingredients
- 2 cups GF flour (Bob's Red Mill 1-to-1 Baking Flour)
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1 Tablespoon honey, agave nectar, or maple syrup
- 2 Tablespoons olive oil
- 1 1/2 cups sparkling water
- 1/4 Tablespoon basil
- 1/4 Tablespoon oregano
- 1/4 Tablespoon thyme
- 1/4 Tablespoon red pepper chili flakes
- 1/4 Tablespoon onion powder
- 1/4 Tablespoon garlic powder
- 1/4 Tablespoon salt
- 1/4 Tablespoon pepper
- 2 Tablespoons melted vegan butter OR 2 Tablespoons olive oil to drizzle on top

Directions
- Set oven to 450 degrees Fahrenheit
- Mix dry ingredients together (flour, baking powder, 1/4 tsp salt)
- Add in wet ingredients (honey, 2 Tbsps olive oil, sparkling water) and mix until combined
- Scoop out batter onto a baking sheet lined with parchment paper
- Spread the batter evenly across the baking sheet with a spatula
- Use 3 fingers (index, middle and ring finger) to make impressions in the dough 1-inch apart
- Drizzle with olive oil or melted vegan butter
- Combine remaining spices together and sprinkle them over the top of the dough
- Place baking sheet into the oven for 20 - 22 minutes or until outside edge of bread is golden brown
- Remove bread from the oven and let cool for 15 minutes
- Once cooled, cut bread into smaller pieces and serve while warm
- Enjoy!
