Abbey has partnered with HP Canada (http://bit.ly/28NqS0Y) to create the cookbook she's been working on as a gift to her family to commemorate her upcoming wedding. This time she's come up with a delicious recipe for Banana Bread that is not only gluten free but incorporates chocolate and almond butter.

As you may have noticed from her last video Abbey has partnered up with HP to make sure her cookbook is not only printed correctly but ends up looking great as well. This is Abbey's first DIY cookbook but she has always done a lot of printing at home. Their instant ink subscription service has turned out to be a real godsend for her. All that time saved running to the store to buy ink has allowed her that little bit of extra time she needs to focus on more important matters.

This recipe was inspired by her mother's banana bread. Growing up Abbey loved banana bread because it was essentially an opportunity to eat cake for breakfast and not feel guilty about it. There are however certain rules when it comes to making banana bread in Abbey's house. The first rule is that there will be no walnuts included in the recipe. No walnuts, no exceptions. The second rule is that the bananas used must be extremely ripe, the more freckles the better. The third rule, and some would say the most important one, is that even if it is healthy it can't taste healthy. Abbey's mom did not have the same rules regarding banana bread that she does which is a big part of what makes this recipe truly unique.

It was important to Abbey that this recipe be gluten free as her sister has a gluten free diet. To start things off you will put some gluten free oats into your food processor and process them until they reach a flour-like consistency. These oats are a replacement for any type of refined white flour you might normally use. Once processed add them to a medium sized mixing bowl. In addition to the oats add in about a cup of coconut flour. Coconut flour is much higher in nutritional value than typical flour so it's a great addition to the recipe. Next you will add some flax seed, baking soda, baking powder, cinnamon, and finally some salt. Whisk that altogether and set it aside for now.

Now that you have your dry ingredients assembled it's time to move on to the wet ones. Start with 2 cups of mashed up extra ripe bananas. The beauty of using extra ripe bananas is that you don't need to add a lot of extra sugar to your recipe as they are already quite sweet. Add your bananas to a medium sized mixing bowl then add in honey, coconut sugar, vanilla, almond milk, 3 eggs, and lastly some natural almond butter. The almond butter really holds everything together and keeps your banana bread nice and moist. Whisk all these ingredients together well and then slowly whisk your dry ingredients in as well. When you have all that mixed together it's time to add in your chocolate chips, use your own discretion on the amount added.

Now get out your baking pan and put a piece of parchment paper in it then give it a quick spritz with some cooking spray to prevent sticking. The next step is to pour your banana bread mixture into your pan and spread it evenly. Take another one of your bananas and cut it in half, take one of the halves and nestle it right down into the center of your pan. Decorate the top with a few more chocolate chips and you are all ready to bake. Preheat your oven to 350' and bake your banana bread for about an hour.
