Gluten Free Fruit Bread with the Sunbeam Bread Maker

Gluten Free Flour
1 cup corn kernels
1 cup white rice
¾ cup brown rice flour
¼ cup dried chickpeas
¼ cup tapioca starch
1. Place into the blender in above over.
2. Place on high and blend for 30 seconds or until a fine flour consistency.
Gluten Free Fruit and Nut Bread
440mls water
3 eggs
80mls olive oil
1 teaspoon white vinegar
100g dried fruit and nuts ( We used dried apricots, dates and walnuts)
1 tablespoon xanthan gum
1 tablespoon white sugar
2 ½ tablespoons brown sugar
1 ¼ teaspoons salt
1 ¼ teaspoonsground cinnamon
605g gluten free flour
60g brown rice flour
2 teaspoons dried yeast
1. Place all ingredients into the pan in the listed order. Close the lid.
2. Place onto the gluten free setting.
3. Once baking has completed allow the bread to cool for 5 minutes.
4. This bread is great cut into slices and frozen. Toast to reheat.
