Gluten Free Hamburger Buns ~ Bob's Red Mill Flour

Gluten Free Hamburger Buns:
Bob's Red Mill Gluten Free
Homemade Wonderful Bread Mix
1 PKG. 16 oz. Bob's Red Mill Gluten Free Homemade Wonderful Bread Mix
1 2/3 c. warm Milk 110* (cow, rice, soy)
1 Whole egg plus enough Egg Whites to make ¾ cup (*note*)
¼ c. Melted Butter or Vegetable Oil
1 tsp. Cider Vinegar
Place contents of package in a large bowl. I use a KitchenAid mixer bowl.
Remove yeast packet.
Add yeast to the warm milk ~ stir ~ let foam for 5 minutes
add Eggs
Melted Butter
Vinegar
Yeast/Milk mixture to the Bread Mix
Use the Paddle (Not dough hook) Mix at medium speed for 3 minutes, scraping down sides of the bowl with a spatula as necessary. (At this point is where you put it into a loaf pan if you were making bread.)
To make the Hamburger Buns Rings:
Fold a 12" piece of Tin foil into 1-1/2-2 Strips. Form into a circle and seal with tape. Spray with Cooking Spray. Use an Ice cream scoop to place the dough into the ring.. you will need two ice cream scoops for each Bun. Makes a total of 9 Buns.
I use a Silpat Mat on my cookie sheet to protect the bottoms from getting over done. Cover the buns with plastic wrap that has been sprayed with cooking spray. Rise 30-45 minutes. Bake in a 375* oven for 35 minutes or until done. I use a Digital thermometer to test them. Make sure they reach 200-210* internal temperature. Remove foil rings. Cool on wire wracks.
(*NOTE*) Helpful hint: Have eggs at room temperature ~ place the eggs in a bowl with warm water to warm them up.
I used a digital thermometer to check the bread for when its done. Bake until 200*-210* in the center of the Buns.
Its also great to check the temperature of the milk and water before adding yeast. It a helpful gadget. My Digital Thermometer is my Acu Rite.
I froze the left over Buns. When ready to serve I defrosted them for 20 seconds in the Microwave and sliced them and put them into the Toaster. You can just warm them for a moment in the Toaster or Toast the Buns. They came out very good.
