Microwave buns/bread/gluten free/grain free
This is my super easy and versatile microwave bun recipe and tutorial. Made two ways, savory or sweet!
Ingredients you will need:
For savory bread:
2 tablespoons coconut flour
1/8 teaspoon baking soda
pinch of salt
1/8 teaspoon garlic powder
1 tablespoon melted butter or coconut oil
1 tablespoon of broth (chicken, beef, or vegetarian)
3 tablespoons liquid egg whites or 1 large egg
Ingredients you will need for the sweet bread:
2 tablespoons coconut flour
1/8 teaspoon baking soda
pinch of salt
1/2 to 1 teaspoon cinnamon powder
1 to 2 tablespoons of dried raisins
1 tablespoon melted butter or coconut oil
1 tablespoon of milk of your choice
2 teaspoons of sugar or sugar substitute of choice
1 large egg
Instructions:
Add all the dry ingredients into a microwavable mug and stir to combine. (For the sweet bread, also add the raisins into the dry ingredients) Beat the egg or egg whites lightly with a fork or small whisk in a small bowl. Add the melted butter or oil and milk to the beaten egg. Next add the wet ingredients into the dry ingredients and mix to combine.
Place in the microwave for approximately 1 minute and 40 seconds. Test the bun by lightly touching the top with your finger, if it feels wet in the center then add another 10 to 15 seconds. Do not over cook or the bread will be too dry. It should look and feel kind of like a sponge. Let sit for a minute inside the mug then take out and cut down the middle to make two buns.
