Gluten Free Chocolate Chip Zucchini Bread
This gluten free zucchini bread recipe is great to have on hand, no matter the season. Great as a snack or even for breakfast, your whole family will love this fresh GF zucchini bread. The best part is that this zucchini bread calls for chocolate chips. Originally the recipe called for 3 cups of sugar but we revisited the recipe and changed it to 1 cup of sugar. We substituted some of the sugar for xanthan gum so the structure of the bread would remain intact, making it easy to slice and serve.
Since our gluten free zucchini bread recipe also calls for walnuts, we recommend adding this optional step: toasting the walnuts before adding them to the batter. This gives the GF zucchini bread a delicious for a nice nutty flavor. Baking is a great way to use extra zucchini you have on hand and it makes a simple snack. Tasty gluten-free baked goods are better when they are homemade. This recipe makes two 8x4-inch loaves, or 4 to 6 mini loaves that are perfect for gifting.
