Gluten Free Bread Stuffing for Turkey or Chicken
Enough Stuffing for a 10-15 Pound Turkey Or a Smaller Chicken with some extra to cook on the side

Udi's Gluten Free Whole Grain Bread 12 oz
and any left over Gluten Free Bread
Or any Gluten Free Bread of your choice.. use whatever amount that is needed

I always make my Stuffing the day before so that in the morning I can pull it out of the Refrigerator and stuff the Turkey.

Pre-heat your broiler:

Melt 1 Stick of Butter (or more if needed)
Line a cookie sheet single layer with bread slices
I had to do this twice
Using a pastry brush
Brush each piece of Bread with the melted butter
Place under the broiler until Toasted/Golden Brown
Continue until all bread has been toasted
After the bread has been toasted..cool on a wire wrack.

In a large dutch oven pan
Melt 1 to 1-1/2 sticks of butter
Add 1 chopped Onion
and 3-4 stalks of celery (more or less depending on your taste)
When the Onions and Celery are almost done
Add Garlic..,to your taste and cook another minute or so.
Optional: add some Red Pepper Flakes.

Cube up the Bread into any size of your choice
Place in a large bowl
Mix with the Vegetable/Butter mix
Add to your taste:
Parsley Flakes
Poultry Seasoning (Bells Seasonings)
Sage
Salt and Pepper


Add 1-1/2 to 2 cups of Gluten Free Chicken Stock
Buy it or make it yourself.
Mix until everything is moist.
I do not add eggs..Eggs are Optional..add Eggs if you wish
Cover and let sit 5 minutes
Uncover,,Check seasonings and Moisture content and re-adjust if needed.
Because I stuff my Turkey,, I want my stuffing a bit dried because it will be picking up a lot of juice while its in the Turkey Cavity.

If you do not want to stuff the Turkey and want to bake it instead:
Butter a casserole dish and place all the stuffing in the dish, take some of the Juice from the Cooked Turkey with a turkey baster and drip over the stuffing. Bake covered at 350* for about 30 minutes ,, uncover and bake until browned for about 20 minutes.
If you have to much Stuffing to stuff the Turkey do the same as above.

If you would like a moister Stuffing add more Chicken Stock.

Do not stuff your Turkey until ready to roast!
Cook/Roast until done. We always check with a Thermometer
