Ingredients Needed:

- Your favorite Italian Sausage (we used Johnsonville in this video)
- Sliced Green Peppers (we used two large)
- Shredded Mozzarella Cheese
- Minced Garlic, 1 heaping teaspoon
- Italian/French Style Bread
- Oregano 1/2 teaspoon
- Basil 1/2 teaspoon
- Olive Oil
- Salt and Pepper

Directions:

FOR THE PEPPERS: You want to start these FIRST because they take a bit!
Place sliced peppers in a frying/saucepan with a generous amount of olive oil to coat the peppers and the pan. Cook these on VERY LOW HEAT and add the oregano, basil, salt and peppers, then stir well. About half way through the cook (roughly 30 minutes) add the garlic (this keeps it from burning). Continue to stir this occasionally and watch so the they don't burn/wilt. This can take 6-120 minutes depending on how tender you want the peppers but be sure to stay patient and allow them to cook SLOWLY! You'll be rewarded for your patience in the end.

FOR THE SAUSAGE: Pre-heat your grill/smoker to 225 degrees Fahrenheit and cook until done. These will take approximately 45-60 minutes if they ARE NOT FROZEN. Be sure not to over cook them! We do NOT want the skin to break as this is what makes the magic in cooking them low and slow this way. Be sure they are done, but don't overcook or use higher heat. Once done it's time to build a sandwich!
FOR THE SANDWICH: Slice your bread open for the sausage and place a layer of mozzarella cheese at the bottom. Now, place the sausage into the bread and add your beautiful (hopefully) sweet peppers (green), add giardiniera (optional) then top with more cheese! Now, carefully wrap these in foil loosely with a tented area at the top to keep the cheese away from the foil (this will RUIN YOUR SANDWICH!). Place them back on the smoker for 10-15 minutes until the cheese melts, unwrap and ENJOY!!
FOR THE OPTIONAL TOMATO SALAD: Add two small packages (I think the were 12oz approximately) of grape tomatoes into a bowl, thinly slice one large onion, slice and half one cucumber and add to the bowl. In a separate small bowl, add one cup olive oil, one half cup red wine vinegar, one teaspoon of basil, one teaspoon of oregano and a heaping tablespoon of minced garlic. Mix together well and pour on top of the tomato mixture. Now, mix well and add salt/pepper to taste. Allow this to sit in the fridge covered for at least an hour to allow the flavors to shake hands. Stir before serving and ENJOY!!
