I picked up a nice meat grinder on Amazon Prime Day, so here is a video showing how easy it is to make homemade smoked sausage! I did this the way Aaron Franklin does, just one grind on medium setting right into the casings. Just cut the meat up into really small chunks, throw it in the freezer for a little over an hour, use about 70/30 meat to fat, and season it up with a little water in the mix.
