Bone-in pork shoulder smoked on the Yoder Loaded Wichita offset smoker

We take a nice 12 pound bone-in pork shoulder and we season with some Uncle Steve's Gator Shake after giving it a rub down with mustard. This is one of the best BBQ rubs for pork shoulder! Then we fire up the Yoder Loaded Wichita offset smoker. We used California white oak to heat it up then mixed hickory and mesquite wood for flavor and heat. The Yoder Loaded Wichita backyard smoker boasts 160 inches of cooking surface and is a must have for any backyard pit master. After around 7 hours on the smoker and several sprays with water and apple cider vinegar spritz, it was time to wrap in foil. We did this once internal temp reached around 165 degrees F. Since I was low on wood we opted to finish it off in the oven at 250 degrees. After all that you should go watch the video! But I will say that Hazel's BBQ sauce was generously used to top it off just before making a delicious sandwich at close to 12 hours from start to finish. This BBQ sauce from Norther California made in the Texas way is near the top of my list for the best BBQ sauce for pulled pork. This is a vinegar based bbq sauce that is tangy, a little sweet, and some hot. Cheers!
