How to BBQ Smoked Pork Butt on the Weber Kettle Grill. If you have a Weber Kettle grill and a few hours to spare, you can make great BBQ. Using only a meat thermometer and some intuition, I'll lead you through the process of smoking on your Weber Kettle Grill. Full recipe is below!

PORK RUB:
1/2 cup black pepper
1/2 cup brown sugar
1/4 cup salt
1/4 cup paprika
Cayenne and Chili Powder to taste
Feel free to adjust to your liking!
NOTES FROM TODAY'S COOK:
- If you don't have digital remote thermometers to manage your grill temp, you'll need to be active in checking on your Weber every 30 to 60 minutes. A meat thermometer inserted through the top vent will give you a rough idea of temps inside the grill.
- Remember that a thermometer at lid level can be anywhere from 30 to 50 degrees hotter than the temp at grill level.
- A pork butt will typically hit the "stall" around 160 degrees. You can double wrap in foil to help push it through.
- When meat temp hits the 195-200 mark, remove from the grill. Leave wrapped and let sit for at least 30 minutes (longer for larger cuts of pork) before pulling.
