Do it yourself Okra & Saltfish recipe. An easy pescatarian dish. Being of Caribbean heritage, it's only right that I share my vibe on the this recipe. Give it go, even create your own twist if you like and share your experience in the comments section. Also if you have any questions leave them in the comments section.

Ingredients :

1 pack of saltfish(250g)
Okra (170g)
1 large onion
3-4 spring onions/scallions
2 cloves of garlic
1/2 Red pepper
1/4 Green pepper
1/2 scotch bonnet
4 Tomatoes
1 tsp black pepper
1 tsp All purpose seasoning

Directions :

Cover Saltfish with cold water in a pan, bring to boiling point, pour out water then repeat process a second time (this is to reduce the salt on the fish). Afterwards put the fish to one side.

Chop the onion, green & red peppers, spring onions and tomatoes (not too fine).

Cut scotch bonnet in half

Chop okra at a diagonal angle (or however you like)

Shred the Saltfish with your hands (not too small)

Over medium heat add a little oil to a saute pan then add onions with the garlic.
Stir for 1 minute.

Add shredded saltfish, and stir in for 1 minute

Add spring onions with red and green peppers and stir in

Add Okra and stir in for 1 minute

Add the all purpose seasoning, black pepper and a sprinkle of mixed herbs, and stir in

Add Scotch bonnet

Add tomatoes and stir in

Turn heat to low, cover pan and leave for 5mins, stir occasionally.

Done!
