Place the wings over direct heat and grill until both sides are golden brown, about 5-7 minutes per side. Using a Pig Tail Food Flipper dip each wing into the barbecue sauce and place over indirect heat for an additional 7 minutes.
Alright, we're back here at the grill. Our wings have been on for about 15 minutes. About eight minutes ago we came out and flipped them over so that the other side could get a nice char on them. And so now it's time to put them into some sauce and get a nice, nice caramelization there with the sauce.
So we're going to take the pig tail food flipper. It's a great instrument if you're grilling. It's really good for turning food and getting it on to the grill and off the grill. So you're going to set this just over the coals this time. And we're just dipping and placing the wings right over the fire. And this isn't going to take too long to set. Just like to get a nice char on it. And we're going to want this to cook for another, oh, four or five minutes probably. And then they'll be done and we'll be ready to eat.
So we're going to go ahead and just put the lid back on. We're going to leave some of them just like this with a spice rub because some people don't necessarily like the addition of the sauce on there and they're really good with just the spice rub. So I'm going to put the lid back on. We're going to let these cook for another three or four minutes and then we'll be ready to serve and have some chicken wings.
So it's about five minutes later. We've had our wings on with the barbeque sauce so they've been on the smoker or the grill for about 20 minutes or so. And we're ready to eat. So we're just going to take the lid. Get ourselves a serving tray here. Now, the one important thing with chicken is that you want to make sure that it's reached an internal temperature of 165 so that you know that it's fully cooked. So we're just going kind of mound these up and take them inside. Might say that if this is a party, they're just ready to go. If it's dinner, maybe cook some french fries with it or some, maybe, deep fried okra or something like that would be good. And we've got around the side, we'll just put the spice rub just once. These don't have any of the sauce on in case folks want to try some without sauce.
