I’ve seen a lot of rainbow or unicorn themed foods on the internet and I thought I must try making some of them. One of the popular ones is the rainbow grilled cheese sandwich. This colorful sandwich started popping up in Asia (most notably in Hong Kong and Japan) and spread around the world like technicolor fire!

I used a combination of cheeses for this recipe. For optimum stretchiness and effect, mozzarella cheese is most ideal but I wanted the sandwich to be tasty too so I added some Italian blend cheese to the mix.

Rainbow Grilled Cheese Sandwich

Ingredients

1 cup Italian style cheese blend (six cheese e.g., mozzarella, provolone, parmesan, asiago, fontina, romano cheese), finely shredded
1 cup mozzarella cheese, finely shredded
Gel food colors (2-8 drops each of pink, yellow, blue, purple colors)
White bread, sliced
2 teaspoon butter (1 tsp per sandwich), at room temperature

Directions

1. Divide the cheeses into 4 bowls. Each bow should contain ¼ cup of each type of cheese.
2. Add drops of gel food colors, one color per bowl of cheese. Start with 2 drops then mix. Add more drops to deepen the color. Ensure that you mix the food color and the cheese well.
3. Butter the outer sides of 2 slices of bread.
4. On the side without butter, place along the long side of the bread slice rows of the different colors of cheeses. Start with pink, then yellow, blue and purple last. Top with the second slice of bread ensuring that the buttered side is on the outside.
5. Heat pan on medium heat. Place the cheese sandwich and grill each side until toasted.
6. Slide in the middle but stop slicing when you reach the cheese part. Slice the other side.
7. Serve immediately.

Tips

This recipe makes 2 grilled cheese sandwiches.

Half of the cheese mixture must be mozzarella cheese to ensure that the end product is stretchy. For the other half, you can also use monterey jack or cheddar cheese. Ensure that you use a light colored cheese and not those heavily tinted in yellow.
