20. Easy & quick Vegan Banana bread Recipe Gluten free , Sugar free soft & Yummy | Vidya Malavade
RECIPE !
Dry ingredients ..
2 cups Oats flour
100-125 gms jaggery ( I added 4 bananas hence used about 100gms jaggery )
3/4 tsp cinnamon
3/4 tsp baking powder
1/2 tsp salt ( less or more as per your taste )
Blueberries/ walnuts optional
Wet ingredients..
2-4 mashed bananas ( you may add more jaggery if you have only 1 or 2 banana)
100 ml olive oil
1 tsp Vanilla extract
1/2 tsp lemon rind
1tsp lemon juice
(If you are not vegetarian , you may add 2 Eggs - optional )
Now mix the dry & wet ingredients nicely .. not too hard though
Grease the pan & put it in the oven 25-30 mins at 180deg C
You can Slice 1 banana & some blueberries/ walnuts to add on top of the mixture in the pan- it looks nice after being baked & the sliced bananas & blueberries taste super yumm , & walnuts add that crunch
Note - Do the knife test - pass a knife through the bread to check if it comes out clean , if not bake another 5 mins or so .. keep checking though that the top doesn’t burn ..
