AVOCADO WITH PRAWN SALAD
Preparation time: 10 minutes
Cooking time: nil
Serves: 4
INGREDIENTS:
2 avocadoes
1 cup cooked prawns, peeled and de-veined
½ firm pear, peeled and finely diced
¼ red onion finely diced
¼ bunch dill, finely chopped
½ long red chilli, seeded and finely diced
¼ cup aioli
sea salt flakes and freshly-ground black pepper
baby cos wedge salad and ranch dressing, to serve
METHOD:
1 Halve the avocadoes and remove the seeds. Cut a small flat surface on the base so that they sit on plates.
2 Combine the prawns, pear, onion, dill and chilli in a bowl and mix well. Add the aioli, season with salt and pepper and stir to combine, then spoon into the avocadoes. Serve with baby cos wedge salad and ranch dressing.
