Greek Peas
Fat, sweet little peas swimming around in a tomato sauce along with dill and carrots. Add a piece of crusty or grilled bread to help sop up all the crazy flavor of soup and you’ve got yourself one of the tastiest and simplest vegan meals in Greek cooking. Yummy!!!
Ingredients
- 500g Peas
- 2 chopped carrots
- 2 chopped onions
- 1 chopped spring onion
- 1 cup olive oil
- 2 cups tomato juice
- roasted potatoes
- chopped dill
- salt
- pepper
Instructions
1. Gently sauté chopped onions and spring onions in olive oil over high heat until almost translucent.
2. Add carrots.
3. Stir to incorporate completely and cook on high heat for 3-4 minutes.
4. Add fresh or thawed peas, stir well and cook for 3-4 minutes.
5. Add olive oil, tomato juice, salt and pepper.
6. Reduce heat to low and cook , covered, for 30 minutes.
7. Add roasted potatoes and chopped dill.
8. Boil for 30 more minutes.
