Candice starts things off with the Vegan Carbonara recipe. Carbonara is traditionally made with parmesan cheese and bacon, as we all know these are off limits to any vegan. Fortunately Candice has some up some excellent substitutes. You will start off making your bacon substitute, which is actually going to be mushroom bacon. Cut up whatever mushrooms you may have on hand and put them in a medium sized bowl. Add 1 tbsp of Tamari to your bowl along with 2 tbsp of olive oil and some fresh cracked pepper. Stir that well and toss your mushrooms in mixing them around in the sauce to get an even coating. You will set those aside for about 10 minutes and let them soak up the flavors.

While your mushrooms are marinating get a large pot, fill it with water and then bring it to a boil and add your pasta to it. Now that we have several of our main components cooking it’s time to focus on the sauce, which is actually a tofu and cashew sauce. Add 1 1/2 cups of tofu, 2 tbsp nutritional yeast, 1/2 cup of cashews, 3 cloves of garlic, 1 tsp of vegetable bouillon, and 3/4 cups of soy milk into your blender. Blend this all together until it reaches a smooth, creamy consistency. Now heat a skillet over medium-high heat and sauté your mushrooms in it for about 4 minutes on each side or until your mushrooms are brown and slightly resemble little pieces of bacon. Sticking with same pan our your mushrooms into a bowl and add a fair amount of chopped onions. Sauté those for about 3 minutes then pour your sauce right on top. Follow that up with your spaghetti noodles and your mushroom bacon. Mix that all together well. Congratulations, you just made vegan carbonara.

Candice moves on to her recipe for a Sun Dried Tomato Fettuccine Alfredo. The first step in this recipe is to bring your water to a boil and toss in your Fettuccine noodles. In a skillet heat up some olive oil, add garlic, and a small onion and let it cook for about 3 minutes. Transfer all of that into a blender and add 1/2 cup of cashews, 1 1/2 cups of soy milk, 1/4 cup of nutritional yeast, 1 tbsp of lemon juice, and lastly 1/4 cup of vegan parmesan cheese and a bit of salt. Next, just blend it all together well. Once your pasta is Al Dente empty out the pot and pour your freshly created sauce into it. Add chopped sun dried tomoatoes into the sauce and mix that well, then add your noodles and keep mixing it all up. That’s all there is to making Sun Dried Tomato Fettuccine Alfredo.

Pasta number 3 is a delicious Spinach and Sausage Gnocchi. In a large skillet heat up some oil, add in garlic and onions and then sauté them. Now crumble up some vegan sausage and mix it in along with 1/4 cup of vegetable broth and 1 can of diced tomatoes Mix that all together and then add in a package of store bought Gnocchi. Cover you pan and let your ingredients cook for about 5 minutes. After 5 minutes sprinkle spinach over the top along with a little pepper, mix your ingredients together again, cover your pan and cook the whole thing for about 5 more minutes. After 5 minutes add in your vegan parmesan, give the ingredients another stir and you are done. Now that wasn’t so hard was it?
