Spanakorizo - Spinach with rice greek style lathero - Σπανακόρυζο πεντανόστιμο!
1/2kg spinach, 1 onion roughly chopped, 2 spring onions, 1-2 leeks roughly chopped, 1 handful of fresh dill, olive oil to almost cover the bottom of your cooking pot, salt and pepper, optionally add a tablespoon of tomato puree, 1/2 cup of carolina rice, 1 cup of water, beef/chicken or vegetable stock. Squeeze a bit of fresh lemon, a bit of fresh pepper and dill and serve with a slice of bread and feta cheese. Delicious!
