Gluten Free Chickpea Flatbread

This bread is one of my all time favorite gluten free hacks!
Not only is this the easiest bread ever to make, it's basically just 1 ingredient - chickpeas
Because it's made using chickpea flour, it's got loads of protein and fiber, but what I like best about this recipe, is that it tastes so much like regular bread.
It's also very sturdy and naturally holds together, meaning you don't need to add thickeners or gums or any of that other junk that's in processed gluten free breads.
It's inspired by an Italian chickpea flatbread called "socca" or "farinata" but I do mine a little differently, by baking it in the oven instead of making it on the stovetop, which makes it even easier to make!
If you're gluten free, this bread is going to be your new best friend. I make this recipe a few times a month to use as a pizza crust, but it's also excellent on it's own.
