Chasing a Plate Cooks is all about recreating food we have eaten on our travels in our home kitchen. Today we're recreating one of Nepal's most popular foods, mo:mo. We ate the best buffalo momo at a no-frills joint in Kathmandu on our recent trip. We ate there a number of times and became addicted to the lean buffalo dumplings and creamy jhol achar (a soup/sauce) that they served at the table with the mo:mo. Make mo:mo at home (Some thoughts... Below are the ingredients we used on the day. If we were to make mo:mo again we would try and find a blender to make the jhol achar as it was nowhere near as blended or as smooth as the one we ate at the restaurant. We'd also add more sesame seeds and perhaps grind the seeds so that the flavour was dispersed more evenly throughout the jhol achar plus add more coriander).

Ingredients 

For the mo:mo filling
Beef mince (we used 500g)
Chopped fresh coriander
Finely crushed and diced garlic
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp ground chilli
1/2 tsp ground cardamom
1/2 tsp ground cinnamon 
1/4 tsp mace
1/4 tsp nutmeg
Salt and pepper (szechuan pepper if you have it)
A liberal splash of oil 

For the mo:mo wrappers
2 cups standard flour
3/4 cup warm water

For the jhol achar
A few tomatoes (we used 5)
1 onion finely diced
4 smashed garlic cloves 
Chilli
Chopped coriander (a decent bunch)
3 tbsp sesame seeds (toasted)
1 tsp cumin seeds (toasted)
1 tsp ground toasted yellow mustard seeds (or you could use fenugreek)
Oil
