SUNSHINE PORK STEAK - Iberico secreto the magic cut of pork. ...and what better way to kick it up with a nice mojo sauce. I need some sunshine how about you?

Preparation time 45 minutes
Cooking time 10 minutes
Ingredients:
Iberico secreto - 1 (serves 3 adults)
Garlic cloves - 4 pieces
Olive oil - 200 ml
Orange juice - 200 ml
Lemon juice - 50 ml
Flat leaf parsley - 3 tablespoons
Salt - ½ teaspoon
Black pepper - 1/4 teaspoon
Ground cumin - ½ teaspoon
Oregano - ½ teaspoon

Planning & Schedule:
0h55m -Start your barbecue and set it up for direct grilling
0h45m – Puree the garlic cloves, make fresh orange juice and lime juice, chop the flat parsley and jalapeño pepper
0h40m – Mix the ingredients for the sauce and let it sit for half an hour
0h10m – Sprinkle salt on the iberico secreto and grill it, when its half way done brush it with the sunshine sauce.
0h05m – Brush it again when the Iberico Secreto is done, the meat rest and serve it with the sunshine sauce.
0h00m - Enjoy a very tasty piece of meat
