How To Make A Restaurant Quality Fish Dish At Home
Cooking food at home doesn't always have to be boring, expensive and time consuming. I mean granted, during Covid-19 lockdown we have no choice and feel we're cooking and cleaning non-stop so why not play around with a new dish... Give it a go and enjoy this easy yet fancy' meal.

What you'll need:
For the Fish:
3 Pieces Halibut Fillet (you can sub any fish fillet)
2 Tbl Canola Oil (you can sub any oil with a hi smoke point such as vegetable, peanut, avocado...)
2 Tbl Butter
For the Lentils:
1 C Lentils
1/2 Cup Onion
1/4 Cup Celery
1/4 Cup Carrot
1/2 Cup White Wine
3/4 Cup Chicken Stock
3/4 Cup Water
For the Artichoke Cream Sauce:
1/2 Cup Artichoke Hearts
1/4 Cup Shallots
2 Tbl Garlic
1/2 Cup White Wine
1/4 Cup Heavy Cream
2 Tbl Butter
For the Beet Greens:
1 bunch Beet Greens
1 Tbl Shallots
2 tsp Garlic
Everything is Salt and Pepper to Taste
