While there are several different types of galettes, this is arguably the most finicky one to make, because there is no cheese or egg to hold it together. It is ONLY potato and butter, so you have to cook it slowly and carefully. It is especially suitable as a garnish underneath meat stews, such as Beef Bourguignon.
