Cooking with frozen vegetables has been a new theme for the channel, and I've had a lot of people who don't normally cook, tell me they've been making the dishes and love them. This is a very simple pesto pasta with a frozen vegetable stir fry medley, that saves you time, money, and tastes delicious.

Recipe:
400 Grams of Frozen Vegetable Stir Fry Medley
300 Grams of Dry Pasta Noodles
2 Cloves of Garlic (Minced)
5 tbsp of Olive Oil
1 tsp Salt and Pepper (To Taste)
3-4 tbsp of Pesto Sauce (I use the Costco brand)
1 Egg
Lemon for Garnish

Instructions:
1. Heat a large pot of water with 4-5 tbsp of salt. Bring to a boil. Cook Pasta to al dente, drain and set aside. Reserve 2 tbsp of starchy salt water to add to sauce.

2. In a large pan or wok, on medium-high heat, add olive oil, and fry the garlic till lightly golden. (30 seconds - 1 minute). Add Frozen vegetable mixture, and toss everything together. Turn up the heat slightly till the veggies are no longer frozen, then lower back to medium high. Add salt and pepper.

3. Add pesto sauce, then pasta noodles. Then lower heat, and add egg onto pasta, and mix. Serve and garnish with lemon and drizzle of olive oil, if desired.
