How To Make Coconut Butter
Store-bought vegan butter contains 12 ingredients. But you can make your own with just one. Vegan Chef Anita Shepherd shows you how. See tips and suggestions below.
Ingredients:
2 cups dried, unsweetened, shredded coconut
optional: 1 pinch sea salt

Coconut Butter Tips:
For faster results, you can shake the blender while blending. This could potentially damage the moving parts of your blender, so if you do this, you have to shake gently, while holding the base with one hand and the bowl steady with the other. Although risky, t's a great trick to get vitamix-like results with a regular blender!
Make sure your equipment is completely dry. Moisture in the blender will lead to gummy, curdled coconut butter.
If you are having difficulty getting the coconut to turn to butter, you can try dividing it into two batches and adding the second half after the first batch has already liquified.
Please note: if stored at cool temperatures the butter will become rock solid. It is best to store at room temperature unless it is for a prolonged period of time.
Best flavor results are achieved with organic, unsweetened coconut with no additives or preservatives. This recipe is great because it has more fiber and less fat than coconut oil. Enjoy!
