MEXICAN CHICKEN TORTILLAS

Ingredients:
for the tortillas
120 grams of corn flour foil
120 grams of wheat flour tipo00
half a teaspoon of salt
120 grams of warm water

For the stuffing
1 chicken breast
2 shallots finely chopped
2 tablespoons of precooked corn
1 roasted red pepper and skinned
The juice of 1 lime
Chopped parsley
Extra virgin olive oil
Salt
Pepper
Chili powder


Step 1
Kneading tortillas joining two flours, salt and water. The dough should be smooth and chewy.

Step 2
Make balls of dough and, with the help of a plate and the film, reduce them into round discs further spread with a rolling pin

Step 3
Cook the tortillas and store them in a tea towel to prevent them from drying out

Step4
Season the chicken breasts with salt, pepper, red pepper and extra virgin olive oil

Step 5
Roast the chicken breasts for about 18 minutes

Step 6
Cut the chicken into small pieces

Step 7
Combine all ingredients for the filling and mix

Step 8
Fill the tortillas and serve.
