One-pan, one plate, no mess. Our kind of cooking. The celebrity chef created his new Channel 4 show, Keep On Cooking and Carry On, as a quick response to the Covid-19 pandemic, as he wants to help those stuck at home to cook with whatever ingredients they might have sitting around the house. He’s cooking with ingredients you’d have hidden at the back of your cupboard or sitting pretty in your fridge, especially when some household food essentials are getting hard to come by. So far we’ve had Jamie’s quick chilli recipe and he’s even showed us how to make homemade pasta using just two ingredients. Now, he’s taken us through a favourite of his that he created back in his uni days the midnight breakfast pan. ‘The breakfast of dreams, a one pan wonder that makes a load of fun out of everyday ingredients,’ Jamie says. It’s a version of a full monty breakfast, while the ‘simplicity and lack of washing up’ gives it that extra cool factor. The method is super easy so there’s no excuse not to give it a go: Place a large pan on a medium heat Add bacon rashers and a twist of oil Add sausages and cook until the fat starts to render Remove bacon and sausages when cooked and throw tomatoes into the fat in the pan using a low heat Grab your eggs and crack them into the pan so they make an edible plate Throw in the bacon and sausages Add some pepper and stick the lid on, still on a low heat, until the eggs are softly cooked Scoop out onto your plate and just add toast Jamie said that while he doesn’t usually have everything he would normally have for the dish, it works with whatever you have in your fridge or your freezer. While he says the dish was ‘invented for a hangover’ it works for breakfast, brunch or brinner and even Jamie’s son Buddy wanted in on the action. Wednesday night’s episode also saw Jamie rehash old recipes he had stored away in his archive for a vegetable cottage pie and a fish tikka curry. Admittedly, Jamie said that he gets eggs can be hard to come by right now and hailed them as the ‘hero’ ingredient, after managing to get his hands on some.
