BBQ Spatchcock Chicken - So Juicy & Tender
There is absolutely no better way of cooking a whole chicken than to Spatchcock it and cook it on the grill. The aroma coming from our Traeger Grill was just incredible and so darn mouth watering. It was hard to resist temptation but at the end it was so worth it.
We began by brinning our chicken for nearly 24 hours and then we prepared it by removing the backbone and flattening it before brushing some extra virgin olive oil all over and then rubbing our favorite rub everywhere in all of the nooks and crannies on our chicken.
The grill was set to 225ºF and once this was reached the smoking & cooking process began. Well a whole 2 hours after it was ready. Let me tell you it was hard to just let it sit there and rest without picking at it but we managed. Now it was ready and of course we had to taste this wonderful creation. It was simply out of this world. So juicy and so tender and so flavorful that we had to be stopped otherwise nobody else would have had a chance of enjoying this bird.

Recipe
1 Whole chicken
Brine Solution
1-1/2 gallon or (8 litres) of ice cold water
1/4 cup extra virgin olive oil
3/4 cup Kosher Salt
1/2 cup soya sauce
1/4 cup sugar
Mix brine real well until all ingredients are dissolve then immerse chicken in brine and leave in refrigerator for 24 hours.
After 24 hours remove chicken from brine and completely dry it up
Cut backbone from chicken using scissors and discard or use it to make some broth
Spread olive oil all over and then use your favorite rub and rubbing it everywhere on the chicken
Start you grill and set to 225ºF
Once temp is reached put your chicken directly on grill breast side up.
Cook until internal temperature reaches 162ºF
Remove from grill and let sit for 20 minutes.
Cut chicken in quarters and serve.
