I call this the love pizza because it takes a little while to make this pizza. You will put in some time and effort, which to me, means you are putting "Love" into it. And that's always a positive thing and one way to show someone love.

So there you have it.


Ingredients:
1 loaf of good french bread, not the soft spongy type
2 Tbsp. butter, melted
1 tsp olive oil
2 cloves of garlic, minced
7 leaves of fresh basil
2 medium yellow onion, super fine dice
1/2 lb mushrooms, super fine dice
1/4 to 1/3 lb. pancetta, chopped
1/2 lb. mozzarella cheese, grated
1/2 lb. monterey jack cheese, grated
2 Tbsp. olive oil

Directions:
Preheat oven to 425 degrees F.
Cook onion and mushroom mixture in 2 Tbsp. olive oil over medium high heat. Stir frequently. Lower the heat to medium low after about 10 minutes.

After 25 minutes add pancetta and cook for an additional 10 minutes. Then add the garlic and saute for 2 minutes more.

Cut the bread in half and then cut each piece in half length wise (butterfly it). Spread the butter/olive oil mixture over the slices.

Layer the onion/mushroom mixture over all the slices evenly. Top with the cheese and bake on a baking sheet in the oven for 10 to 15 minutes or until cheese is melted and everything is hot.

Sprinkle fresh chopped basil over all. Enjoy!
