COOKING WITH DAWN
Today I'm going to show you how to make GLUTEN FREE MINI TURKEY MEATBALLS.
This is one of my favorite foods to make, great for a quick snack in between meals, lunch or dinner. I love putting a couple in a container and have them the next day as left overs as well.
*Prep time: 15-20 minutes
(depending on which family member is helping you chop!)
*Baking time: 15-18 minutes
*Preheat the oven to 400°
Set up 2 non-stick baking sheets
This should make about 35 mini meatballs - depending on how big or small you make them.
*RECIPE: MINI TURKEY MEATBALLS*
1 pound lean ground turkey meat
1 cup ~ Gluten free bread crumbs
1 cup~ Grated Parmesan cheese or Romano
2-3 Shallots chopped finely (or small onion)
3-4 Garlic cloves chopped finely
2 Eggs
1/4 cup Parsley chopped finely
1/4 cup Basil (as you wish)
1 cup of diced tomatoes or ketchup
Salt & Pepper - as you wish!
Olive oil - about 2 TBL
Mix all ingredients together in a large bowl
Keep a little dash of extra bread crumbs and Gluten Free Flour near by to roll the balls with so it doesn't still to your hands that much.
