Time: 5 mins to prepare and 12 mins to cook
Ingredients:
vegetable oil, for greasing
4 skin-on salmon fillets (about 130g each), at room temperature
2 tbsp olive oil
sea salt and freshly ground black pepper
Method:
1. Dampen a few sheets of kitchen paper with the vegetable oil and wipe over the barbecue grill to grease.
2. Heat the barbecue to high.
3. Place the salmon fillets on a board and rub all over with the olive oil.
4. Season both sides of the salmon with salt and pepper.
5. Place the salmon skin-side down on the oiled grilled to the side of the main heat (not directly above the main flames).
6. Allow to cook for 7-8 mins without touching until half cooked (the sides of the salmon will have turned opaque about half-way up) and the skin underneath is crisp and charred - it should come away from the grill quite easily.
7. Use tongs (and a fish slice if needed) to carefully turn the salmon fillets over and cook for a further 3-4 mins on the skinless side.
8. After this time the salmon should be fully opaque and starting to flake. Carefully lift off the barbecue and serve.
