Ingredients:
Pasta - 200g
Water

Potato - 1 medium
Carrot - 1 small
Garlic - 2 big

Butter - 1 tbsp plus 3 tbsp
Maida / All purpose flour - 2 tbsp
Milk - 2 cups
Mayonnaise - 2 tbsp
Shredded cheese (Optional)
Oregano leaves
Basil leaves
Salt

Steps:
Boil water in a saucepan.
Add salt and pasta to the boiling water and cook covered.
Once the pasta is cooked, drain off the excess water.

Heat a pan and melt 1 tbsp butter.
Add minced garlic and saute.
Add chopped vegetables and salt. Cook covered.
Remove and set aside.

Melt 3 tbsp butter in the same pan and add maida.
Stir continuously and cook on low flame till the raw smell goes away.
Add milk and stir continuously until the mixture thickens.
Add cooked vegetables and mayonnaise.
Add oregano and basil leaves. Mix well.
Add cooked and drained pasta. Mix well.
Add shredded cheese, if you are using.
Turn off the flame and enjoy warm.

Notes:
- I used penne pasta. You can use any variety.
- You can add veggies of your choice.
- Instead of oregano and basil leaves, you can also use a dash of Italian herbs.
- I used mozzarella cheese.
- If the pasta becomes too thick or if you are re-heating the leftover pasta, add little milk.
