THERMAL PORTABLE COOKER BREAD ROLLS and SCONES

This is my first attempt at these and I cooked them without a recipe I think its simple enough not to need any but have typed out what I did and hope it helps.




THE ROLLS - I am sure any bread recipe would work.

I put the yeast packet that came with the bread mix into a cup with a teaspoon of sugar and about 1/4 WARM not hot water and waited for it to foam. Then I mixed it and more warm water (check your packet instructions for quantity) into say 7/8th of the bread mix till it formed the dough. I then sprinkled a bit of the excess mixture on it and kneaded it for about five minutes I think 10 is usually recommended but I get lazy. :)

Now we are up to where the Youtube starts.

Put 2-3 cups of warm water into the larger pot.
Oil the smaller pot and put the kneaded dough into it. I also oiled the bottom of the lid.
Put both pots into the Thermal pot and put the lid on - leave till it roughly doubles. If you have made bread before this happens much sooner in the Thermal Pot.

Punch down and divide into six rolls. Shape as desired and I sprinkled parmesan cheese on top. Again back into the Thermal Pot with warm water until they double.

THEN Fill the larger pot 2/3rds with hot water if you have it and put the smaller one into it and put both on a heat source until it boils and turn down to simmer for 10 minutes.

Then put the lot into the Thermal pot for at least l hour. Leave to cool before tipping out. They will have a soft crust not a crusty one as in a conventional oven.

THE SCONES- Again most recipes should work, I prefer this which is a modification of an old Scone recipe.

Into two cups of Self Raising Flour and a pinch of salt mix 1 200ml carton of cream (I use UHT as it travel without refrigeration)
Then about half a small can of lemonade - try a third first
Press out onto a floured board to a circle about 8" or you could shape individual scones
Oil the small pot
Press scone mixture into the small pot and cut into 8.
2/3rds fill the large pot and put smaller pot with scone mixture in it.
Bring to boil and simmer 20 minutes
Then put the lot into the Thermal Pot and leave for at least one hour.
Remove small pot and cool then tip out
