Cook With Me (yes I am Gordon Ramsey)
Some v wholesome content of me trying to cook for 15 minutes lmaoooo. Nah but seriously it was a little bit of a fail but I was cracking up whilst editing so I hope you all enjoy it! All my love, stay safe & stay home! Em x
Ingredients (for 4 fritters)
50g sweetcorn OR 1/2 corn on the cob
50g courgettes
75g butternut squash
50g polenta
1 spring onion
1tsp paprika
1tsp cumin
1tsp chilli
Salt & Pepper
handful of coriander
50ml oat milk
1 1/2tbsp flour
1 flax egg
Salsa
1 big tomato or handful of cherry tomatoes
1/2 red onion
1 avodcado
handful of corriander
1/2 lemon
olive oil
salt & pepper
Method
1. Place all ingredients into a large bowl, season & mix with a wooden spoon. Add a little more milk if its too thick.
2. Heat some olive oil in a pan. Add 2 tbsp of mixture per fritter & flatten out. fry over a medium heat for 2-3 minutes on each side.
3. Meanwhile mix all ingredients for the salsa and serve with the fritters
